Quick Lentil & Tomato Dahl for Caterers
The recipe uses storecupboard ingredients - serve on its own with a little rice and salad for a simple, satisfying lunch or as part of a curry meal.
Options:
cooked diced potatoes cooked in with the dahl a couple of minutes before serving
baby spinach leaves cooked in for a minute or two.

Tofu Burgers for Caterers
These nice burgers are a doddle to make and freeze well, so it's worth making a big batch. Use a burger press if you have one as it helps them to keep their shape. And just squidge back together with a fish slice if they go a little crumbly!
Oven-roasted Tofu Mediterranean for Caterers
An aromatic and delicious recipe. If you don't use tofu because it's an unfamiliar ingredient or you are concerned that it's tasteless, this should persuade you! It would work best with a couple of other accompaniments - some are suggested below.

Thai Vegetable Curry for Caterers
Delicious, Fresh-tasting Red or Green Thai Vegetable Curry with Tofu
This lovely curry is a winner. Simply ensure that the curry paste you buy is vegan - that it contains no shrimp or fish sauce. Chilli Non Carne
This Martin Shaw recipe is a Viva! classic - it's been fed to tens of thousands of people at Viva!'s Incredible Veggie Roadshows and ticks all the boxes: cheap, easy, freezes well and is enjoyed by meat eaters and veggies alike! Make it mild for kids/chilli-haters by using just a small amount of mild chilli powder and serving hot pepper sauce on the side for heat-lovers.
Budget options: use dried savoury TVP (soya mince) and/or cooked whole lentils.
Soya-free and gluten-free? Omit veggie mince and use lentils/beans
