Cheezy Sauce… with three variations

Cheezy Sauce… with three variations

Serves 4-6

This super-quick, vegan cheese sauce is great with pasta (macaroni or penne); potatoes and greens or baked potatoes.

  • 180ml/6fl oz water + 2 tbsp
  • 6 tbsp tahini
  • 2 tbsp nutritional yeast flakes (Engevita/Marigold yeast flakes sold in good health stores)
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped shallot finely chopped (1 medium shallot) or equivalent red onion
  • 2 tbsp light miso
  1. Version 1 - combine all ingredients and blend until smooth.
  2. Version 2 – low fat. As above, except reduce tahini to 2 tbsp and add 60g/4tbsp silken tofu
  3. Version 3 – smoked flavour. As version 1 or 2, except add a pinch of smoked paprika – available in big supermarkets, delis or health shops.

Heat gently without boiling before pouring over your meal.
