Apricot Flapjacks
Vegan
An easy, reduced-fat & economical alternative to shop-bought cereal bars
200g/7oz porridge oats
2 tbsp golden syrup - or use 3 tbsp agave syrup
1 tbsp vegan margarine (eg Pure, Suma, Vitaquell, Biona)
1 tbsp light brown sugar
10 dried apricots, chopped quite small
1. Melt the syrup, sugar and margarine together in a pan over a gentle heat
2. When thoroughly melted, mix in the oats and apricots and press the mixture into an oiled cake tin - an 8 inch square tin does well
3. Bake in the oven for 10-20 minutes at 190C/380F/Gas Mark 5 or until just beginning to brown
4. Cut lines into the 'cake' while still warm. Cool and break into bars

Made these this morning- I had some fresh figs so a few went in it too, it was lovely. I gave it to my kids warm for breakfast. Thanks for sharing!
