Brussels Sprouts with Sesame Oil & Bitter Marmalade
Vegan
Mixed with just-cooked sprouts (they should have a little ‘bite’), the sesame oil and tangy marmalade give a zingy and unexpectedly yummy twist to this much-undervalued vegetable!
225g/8oz fresh prepared Brussel sprouts - don't put crosses at the bottom as this can make them go soggy!
2 heaped tbsp marmalade - thick cut is best, tangy and not too sweet
1 tbsp toasted sesame oil
1. Cook sprouts in boiling water for 5 minutes. Drain. Alternatively, steam them - whichever method, they should be just cooked, not mushy.
2. Return to pan with marmalade and sesame oil and stir until sprouts are coated. Serve immediately.
