Nutty Butty Vegan Coleslaw Sandwich

Made with delicious home-made vegan coleslaw, this is a treat of a sarnie.

Serves:

Time: 
15-20 minutes, including 10-15 minutes to make Coleslaw
Ingredients: 

Coleslaw (this makes quite a lot, so halve or quarter the quantities if you don't think you'll get through a whole batch)
1 small white cabbage, grated OR half a small white cabbage and half a celeriac, peeled and grated (in season during winter)
2 carrots, grated
2 spring onions or 1 small red onion, finely sliced
2 tbsp Plamil or other vegan mayonnaise mixed with 2 tbsp soya or rice milk
Salt and freshly ground black pepper

Sliced wholemeal bread
Peanut or any other nut butter
Beansprouts
Rocket or other green leaves

Method: 

1. Make the coleslaw if you haven't already done so - grate vegetables by hand or with a food processor attachment. Mix all ingredients together so everything is well-coated in the mayo mixture.

2. Spread the bread with nut butter and add other ingredients to make a sandwich.
