Artichokes With Lemon 'Butter'
Vegan
A beautiful traditional summer dish using Globe Artichokes.
2 globe artichokes
2 tbsp vegan margarine
Juice of two lemons to make 1/4 cup
1/8 teaspoon salt
Salt and pepper to taste
1. Bring a large saucepan of salted water to the boil, then add the artichokes. Boil them uncovered for 30 minutes. They are cooked when the bottoms and tender and the leaves pull out easily.
2. During the last 5 minutes of the cooking time, put all the remaining ingredients into a small saucepan and melt them together, stirring with a wooden spoon.
3. Serve the artichokes with the lemon 'butter' in a bowl at the side, so you can dip in the leaves. The most edible parts of the leaves are near their base.
