Porridge with Flax, Berries and Banana

Flax seeds (linseeds) are really cheap if you buy them loose or in packets. Store them in the fridge but grind them up a few spoonfuls at a time. They need to be ground up because the body can't digest them properly otherwise. Use a little electric coffee or spice grinder if you have one - it takes seconds.

Ingredients: 

50g/ 1 3/4oz  porridge oats
350ml/12 fl oz soya milk

Topping

2 tbsp berries
1/2 banana
2 tbsp flax seeds

Tip: you can just use a mug to measure your oats and soya milk. You need 1 mug of oats to 2 1/4 mugs of liquid. 
Also, to get extra smooth porridge, try soaking your oats in water or soya milk the night before.

Method: 

 1. Put the oats and soya milk in a saucepan and bring to the boil and simmer for 4-5 mins, stirring so the porridge doesn't stick to the bottom of the pan.

 2. Keep stirring the porridge, adding in more soya milk until it has reached the desired consistency. The longer you cook it for, the smoother it becomes, just keep adding more soya milk gradually.

3. Serve and add the toppings of berries, banana and flax seed.

4. A spoonful of soya yoghurt makes a lovely added extra!

This recipe if fine but it does make hard work of porridge making. Put half a cup (125ml) of oats plus a quarter of a cup (60ml) of wheatgerm in a microwavable pot add 30 millilitres of water (or soya milk but I've always found this makes it to rich) place in microwave and cook on the highest setting for three minutes. Prefect porridge every time although I have found that some different brands of oats taste better then others I've used Flahavan's Irish Organic porridge oats for sometime now.

Hi, thanks for the microwave tips, really useful. We don't offer microwave recipes because a lot of people don't like using them. So we always offer the stove-top/oven alternative! And actually, it doesn't take that much longer.
