Roasted Butternut Squash

The simplest way to enjoy Butternut Squash.

No sesame
No soya
Reduced fat
Reduced sugar
Ingredients: 

1 large or 2 small butternut squash, cut into quarters lengthways, seeds removed
olive oil, for drizzling or low-calorie oil spray
2 cloves garlic, crushed
Salt and freshly ground black pepper
 

Method: 

1. Preheat oven to 180C/350F/Gas 4.

2. Cut the squash into half or quarters - then place in a roasting dish.

3. Drizzle with olive oil or spray generously with the oil spray. Sprinkle with the crushed garlic and salt and pepper.

4. Roast for 45-50 mins until soft and golden!
