Roasted Red Pepper Baguettes with Red Onion and Blue ‘Cheese’

This Roasted Red Pepper Baguette recipe is inspired by one of my favourite sandwiches as a vegetarian - but made vegan - so it's kinder!
1 tbsp olive oil
2 large baguettes
2 peppers, sliced
½ red onion, sliced
6 slices of vegan blue ‘cheese’ like Cheezly or Sheese
1. In a medium saucepan, fry the pepper and onion until soft and browning.
2. Cut open each baguette and spoon pepper and onion filling inside.
3. Lay the vegan ‘cheese’ over the top and then bake in a preheated oven (190ºC/375ºF/Gas Mark 5 for around 10 minutes until the ‘cheese’ starts to melt in down through the filling. Serve with a side salad and vegan mayo!
