Made in honour of a meat-eater who loved eating this dish in Hong Kong. Apparently, it tastes very much like the real thing!

A simple, easy curry that's good served with warm chappatis or brown rice. Alternatively, try our easy dahl recipe - and add a dollop of plain soya yoghurt on the side for good measure!

It can also be made from cooked leftover potatoes - just add them later in the cooking process so they don't go too mushy.

One of those eastern soupy-stew recipes that is really aromatic and satisfying. Just make sure you get the thicker rice noodles, not the 'bird's nest' type! This delicious recipe that we’ve adapted from Catherine Mason’s wonderful Veg book is well worth the effort, but remember, if you are short of time, use a ready made veggie Thai sauce such as Geo or Go Organic, available from Tesco, Sainsbury’s and other good supermarkets and health stores.

This is good served with cooked rice or sautéed potatoes and some green beans or a watercress salad.

This is an easy and comforting dish. It could easily and quickly be made with left-over brown rice too - just make sure the rice is well seasoned and thoroughly heated until very hot.

This lovely fragrant stew can be jazzed up with different accompaniments, such as hummus; baba ganoush; harissa paste; tabouleh salad or quinoa pilaf. It's cheap to make and ticks many boxes: low-fat, wheat-free, nut and soya-free etc.

Nothing to do with football… . Rather, it is a mixture between a pizza and a crêpe! Socca is traditional street food from Nice – with a similar dish found in Genoa but called Farinata by the Italians. We have given it a modern twist.
